Mmm, yummy. I substituted a couple of splashes of white wine for the Roquefort cheese.
That gives new meaning to the expression, "Would you like a little cheese with your w(h)ine?"
I assume there was still a bit of cheese in the mac & cheese?

Funny, I didn't realize how that sounded if you didn't actually go and check out the recipe and see that there was also a LOT of cheddar cheese and parmesan cheese. :)

I didn't look at the recipe, Seadragon -- as I'm fond of saying, my culinary cooking skills taper off at "Chef Boyardee."

That recipe looks good. I might also try a little gorgonzola instead of the roquefort.
Bleu cheeses also make for a nice twist on alfredo sauce.
